Baked Egg In An Avocado (With a Side Of Mojito)
I’ve seen this on Pinterest and today saw it again on Facebook, and I was intrigued. I love avocados and eat them nearly every day. I usually prefer them cold with chile y limón, but the promise of a quick, easy and satisfying breakfast grabbed my attention. Unfortunately, the instructions were a little haywire. I made it for my dinner tonight, and here’s what worked for me:
Ingredients for one serving:
half an avocado
salt and pepper
about 8 fresh mint leaves, shake off the spiders
1 cup of crushed ice
2 oz white rum
1 tbsp brown sugar
2 oz club soda
Preheat oven to 425F. Scoop out a little of the avocado with a spoon, and obviously put it directly into your mouth. Set the avocado in a baking dish, I used a mini loaf pan. Crack the egg into the avocado. Bake it until it is just how you like it. Unfortunately for me, this took ages because the first instructions I read said to bake it at 180C which translates to 350F and after 20 minutes I cranked it up to 425, went out to collect some mint for my mojito, and when I got back it was finally ready. At 425 it shouldn’t take much time, just keep jiggling it to see how the egg is setting. I like the white cooked and the yolk soft. When it was done I sprinkled on salt and pepper, some chili and fresh squeezed lime. I still prefer my avocado chilled, but this was yummy.
For the Mojito, muddle the sugar, juice of half a lime, torn mint leaves and a little of the ice. When the sugar dissolves, add the rest of the ice, rum and club soda. I didn’t have any crushed ice this evening so I put everything in the magic bullet. It wasn’t as pretty, but tasted just as good.
Uh, yeah, I ate my dinner with a Menchie’s spoon.
