In high school my Dad always called me, “Last Minute Liz.” So, here I am, at the last minute writing a blog post that was due 45 minutes ago. I’m not done procrastinating either. I’m going to go fix myself a Mojito. I have to find the scissors and a flashlight so I can harvest some fresh mint.
That took longer than expected because the recipe had to be modified when I realized I was out of limes. I grabbed a grapefruit from the neighbor’s tree and invented a new mojito with grapefruit juice. Yummy. Now I’m ready. Wait, where are my fuzzy writing socks?
I’m really excited to be participating in the 5 Minutes for Mom Blog Party again this year. I’m relatively new to blogging, but I do understand that the idea is to reach people and build a community. I spend a lot of time reading blog posts, so I’m looking forward to clicking a lot of links in the next week.
My blog is mostly about my current life as a single work at home mom to a 3 year old girl. We’re snowbirds, so we spend summers in Beautiful British Columbia, and the rest of the year in Southern California. How we got here is a long story that I am going to share at some point.
I’m also converting most of our favorite dishes to gluten free, so you’ll find some yummy GF recipes here. My little one was suffering from inflammation in her joints, and eliminating gluten from her diet seems to have made it go away. As an added bonus I stopped getting migraines, and I was having a 3 day migraine nearly every month. Coincidence? Perhaps, but do I want to start eating gluten again just to see if I can trigger a migraine? Uh, nope.

That's a crazy journey but at least it seems like it spans 20 years. I just went through a 2 year odyssey where we moved 4 times–once due to Hurricanes Irene and Lee. Love your teaser! Can't wait for the blog post or…e-book? for the story.
I love to visit winter, but I don't want to live in it. The short dark days make me SAD.
I try with the healthy foods, it's always a bit of a struggle, but I make it a little easier by not buying typical kid food. If I wouldn't put it in my body, I wouldn't feed it to her. We're on a tight budget too, so I try not to waste much. We don't have a huge variety of food in the house, just what we need for the next few days.
Nice meeting you Lizzie. What I want to be a snowbird. This past winter was too much.
It was a recent trip to Florida that got her inspired to learn to swim. We were playing in the water at Juno Beach in February.

Thanks! I only post recipes that I have actually made successfully. This morning I made the gluten free banana bread again, but in a muffin tin. Sooo yummy!

Totally kindred spirits! I'm now also guilty of procrastinating on following up on all of these comments. LOL, I'm overwhelmed and delighted by the conversations I'm having as a result of the UBP14.
LOL – it's true though, there are times when the 10 second rule applies, and others when it doesn't, right? Like at the ducky park, I am so squeamish about duck poop, if food falls on the grass there I consider it biohazard. Blech. I also tell her not to drink bath water because it is bum soup.
Reading this, I saw "Don't lick THAT trash can," like licking the other one would be okay. I'm a single mom of five boys. I guess the term "choose your battles" has sunk in too far when I automatically think. "Hey maybe THAT trash can is bad, but I'd let him get away with licking the other one." I once had higher standards… 😉

I wish we ate better, but money and (even more precious) time often prevent us from doing so. Glad to see you're putting together healthy foods for your daughter. That's so important! Thank you! I can't say for sure if it was eliminating gluten that made such a difference for me, or if it was just a happy coincidence. I am delighted to be rid of the migraines though, and I don't want to test it by eating wheat again.
We were in Trader Joe's recently and Ebi announced to the cashier that we were buying mint for Mommy's Mojitos!

Hey Lizzie! Sounds like we are sort of kindred spirits. Procrastination is my middle name. I find it very interesting how eliminating gluten from your family's diet has had such a positive impact on your health as well as your daughter's. Food for thought.
